PIckled Beets and Eggs

My mother was Pennsylvania Dutch and during my childhood, summer was a season of canning to put away the summer's bounty for winter.  One of those delicacies was pickled beets and eggs.  Never a lover of beets I always ate the eggs.  Now as my tastes have changed ( I love beets)  I thought I would try making a jar of the beets and eggs. My mother passed away a few years back so I had to rely on some of her cookbooks for a recipe.  I just finished the jars with beets from our garden and eggs from our chickens.  Now to wait for at least 48 hours for the flavor and color to create the desired effect.
