Roasted Lavender and Thyme Potatoes


I am always looking for lavender recipes that are exceptional in taste, easy to prepare and wonderfully flavorful.
Tonight for dinner I took the simple roasted potato and added a little bit of flavor.  I should have taken pictures before dinner as there was nothing left to photograph after we ate.  The blend of flavors of thyme and lavender complement each other and also help disguise each other making it difficult to identify "what is that flavor?"

Roasted Lavender and Thyme Potatoes

Ingredients
4 medium size potatoes cut into wedges
3 tablespoons of olive oil
2 teaspoons of fresh thyme
2 teaspoons of dried Purple Dog lavender buds
Salt and Pepper to taste

Directions
1. Boil potatoes for 10 minutes
2. Drain potatoes and saute in oil with thyme, lavender, salt and pepper  till tender and crispy browned on the outside, (approx. 10 minutes)

This recipe sounds awesone! I can't wait to try it, but you'll have to let me know when I can buy the Purple Dog lavender buds I need for the recipe! :)
